Foundry Chocolate came to life when David Herrick read an article about someone in the UK making chocolate on a micro scale and realised, for the first time, that you didn't need a huge factory to make chocolate from scratch. He taught himself everything he knows through extensive research and experimentation, before launching Foundry with his wife Janelle in 2018. The pair have gone on to become one of the most highly awarded craft chocolate makers in Oceania, with accolades including the Supreme Award at the NZ Chocolate Awards, Golds at the Academy of Chocolate Awards, and Best in Show at the Northwest Chocolate Festival in Seattle.

Based in Silverdale, just north of Auckland, Foundry makes its chocolate with just two ingredients: cacao beans and organic sugar – no added cacao butter, lecithin or vanilla. It's a deliberate and uncompromising philosophy that lets the remarkable personality of each cacao origin speak for itself, coaxing out vivid, complex flavours that will stop first-time tasters in their tracks. Janelle designs the beautiful packaging, with each bar's colours and illustration tied directly to its origin – making every Foundry bar as sensational to experience as it is to taste.
